If you look in the lower left corner you can see the head of the poor animal and the wheelbarrow contains all the innards!

The piece of meat hanging on the far left is the tongue. The temperature was in the low 80s but very dry. Needless to say there were lots of flies buzzing around. But you can see that she keeps her knife (on the left above the wrapped head) very clean on cardboard.

I have seen Basque sheepherders in the high country in Northeastern Nevada hang their meat outside of their trailer/wagon, out in the air and the sun and it lasts as long as it takes to eat it. In the photo here, the meat is sold the same day, so there is no storage problem. We live in a different world. I can buy a couple of steaks and they can last for a week in the fridge.
