I know what you mean!
An entire meal in one piece, doing what it’s supposed to do as you take it apart to eat it. That and coffee and orange juice and time to eat it slowly. It’s a complicated concoction, a little messy, but always surprisingly good. Maybe because we have eggs that way so seldom that it seems special when we do.
My peasant version is a good pork sausage patty, a crispy, toasted English muffin, fresh slices of cucumber and, of course an egg that’s not too runny, eaten like a sandwich. The egg McMuffin is a very distant cousin, but will do in a pinch – when you are at the airport to catch a 6 am flight and it’s only 5 and you need something, almost anything, to make the stomach stop nagging you and the luxury of eggs Benedict is beyond imagination.
