A friends father has some vine growing in front of his house. Three of these vines are Muscat, and he let me pick them to make ice wine with. I first froze the grapes themselves and then pressed them while frozen. The 5 gallons of juice that I collected had 24% sugar. I then froze the juice and scooped out the ice, which is what I’m doing in the photo. The ice has a sugar content of about 10%, so the leftover juice was then elevated to 27% sugar. I’m doing another cycle of freezing and thawing, trying to get the juice up to 35% sugar.
